Day Four

We toured the distillery facilities today, which are fascinating. I was surprised to hear of the large numbers of tourists who flock yearly to the small town to tour the grounds and witness the whiskey production. I couldn't imagine why anyone would care. But I found myself strangely compelled by the process of malting and mashing and germination, fermentation, distillation and maturation. The latter is particularly appealing to me and I'm pretty certain whatever project I commit to here will involve stretched or disrupted time.
